This study uses the notion of the "Moving Hearth" to examine the culinary identity of Amritsar as an evolving socio-cultural system that has been influenced by historical transformations, and not as a fixed or static regional tradition. It will use this concept to assess how the location, meaning and organization of food preparation have changed over time in response to three major forces: faith, Partition, and tourism. Therefore, food in Amritsar will be considered as a material record of the evolution of relationships among people (social), economic structure, and cultural meaning.
